Twice Baked Potatoes Recipe

This is a great Thanksgiving recipe that your kids will enjoy helping you prepare.

There are going to be plenty of turkeys and hams and other rich foods this time of year, so it makes sense to supplement it all with delicious potatoes. The lowly potato is the unsung holiday staple, complimenting the star of the dinner show. Twice baked potatoes are an ideal way to serve them, and kids can practically make them all by themselves, allowing you to focus on basting that big bird. It's fun to work together in the kitchen preparing a family meal. This recipe has so many variations that it never tastes the same way twice.

Twice Baked Potatoes (Makes 6 servings)

What you need:

6 potatoes, baked with skins on
1/4 cup butter or margarine
1 cup sour cream
3 cups shredded cheddar cheese
1/4 cup bacon bits or finely diced ham
1/4 cup green onions, chopped fine
Milk
Paprika

What you do:

1. Cut potatoes in half, lengthwise. With a spoon, scoop out the white potato meat and place it into a bowl to mash. Leave about 1/4 of an inch in your potato skin "bowl."

2. Gently lay the shells on a baking tray.

3. Add butter, sour cream, 1 1/2 cups of cheese, bacon bits and onions to the potato innards. Mash togther well. Add a few teaspoons of milk to make texture more creamy, if needed.

4. With a spoon, carefully scoop the potato mixture back into the shells. Top with the rest of the cheese.

5. Bake in a 350 degree oven for 20 minutes.

TIPS:

* Add diced chicken instead of bacon and ranch dressing instead of sour cream for a tasty alternative.
* Omit onions if your kids don't like them. Use a teaspoon of onion powder instead.
* Most kids can make this themselves after you've baked the potatoes and instructed them carefully.
* Talk about what other food combinations you can do with twice baked potatoes. Mexican style? How about a veggie combo? The possibilities are endless.
