This is a twist on the classic Tuna Noodle Casserole but it's made with Turkey so it's great for Thanksgiving.

One of my most favorite parts of Thanksgiving is the leftovers. We had the big day away from our home so I knew that if I didn't make Thanksgiving II at our house, there would be no delicious leftovers. Now we have containers full of turkey, and lots of turkey recipes to make. This one is a great one for letting kids help out--chopping turkey, grating cheese, melting butter, mixing and sprinkling bread crumbs. Beware! For every piece of turkey they cut up, another will be eaten.

Turkey Noodle Casserole (can also use chicken or tuna instead of turkey)

What you need:

1 (8 ounce) package curly egg noodles
4 cups cooked, cubed turkey
1 can condensed cream of mushroom soup
1/2 stick butter, melted
2 cups milk
1 cup sharp cheddar cheese, grated
1/4 cup Parmesean cheese
1 cup bread crumbs, mixed with 2 tablespoons melted butter

What you do:

Cook the noodles according to package directions. Drain. Mix turkey, soup, butter, milk, and cheeses together. Add noodles to sauce mixture and coat evenly. Pour into a baking dish and spread bread crumbs evenly on top. Bake at 400 degrees for 30 minutes.
