Pumpkin Chocolate Chip Cookies Recipe

A great recipe for pumpkin chocolate chip cookies that i easy enough to get your kids to help you with it.

Although these cookies are great any time of year, pumpkin simply tastes better in the fall. Every time we make these cookies, they disappear overnight. They're moist and slightly spicy and even kids that don't care for pumpkin pie will like them. These cookies are simple to make, and use a minimum of ingredients. The recipe is a great one for younger kids as they don't require eggs--much easier for littler chefs. Pumpkin Chocolate Chip Cookies are perfect to make and take for any Halloween, Thanksgiving or even Christmas activity. I promise this will be the last cookie recipe for a while!

What you need:

2 cups sugar
1 cup shortening
1 (15 oz.) can pumpkin
2 tsp. vanilla
4 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1 bag milk chocolate chips

What you do:

Preheat oven to 375 degrees F. Cream the sugar, shortening, pumpkin and vanilla together. Mix well. Then in a separate bowl, combine flour, baking soda and cinnamon. Stir the dry mixture into the wet mixture. Blend well until completely combined then add in the chocolate chips. Drop approximately 1 teaspoon onto an ungreased baking sheet until sheet is filled (about 2 inches apart). Bake for 12 to 15 minutes or until set. Set cookies on a wire rack to cool.
