Lovely Leftover Ham Casserole

Now that Christmas is over and your refridgerator is stuffed with leftovers, there are so many things to do with that remaining honey-baked ham. This easy casserole starring ham is simple to make and a great recipe for kids to follow. There's lots of dicing, chopping and slicing to keep several kids busy while you operate the stove and oven. This one-dish-wonder also incorporates a lot of other ingredients that you likely have lingering from the big day. This casserole is also great to add other things you might have in the refrigerator, from crumbled bacon bits to sliced black olives.

Lovely Leftover Ham Casserole

6 oz. dry spaghetti, cut into 2-inch pieces 2 cups diced cooked ham 3 tablespoons butter 1/2 cup mushrooms, sliced 4 green onions, sliced 4 tablespoons flour 1 cup chicken broth 1 cup milk salt and pepper to taste 1 cup shredded Cheddar cheese

1. Cook spaghetti according to package instructions, then drain.

2. Combine cooked pasta and ham in a large bowl.

3. Melt butter over medium heat and add mushrooms and green onions. Cook until tender.

4. Whisk in flour until thoroughly blended, then stir in broth and milk. Cook until thickened, then add salt and pepper to taste.

5. Stir mixture into pasta and ham bowl, then add cheese. Pour entire mixture into a baking dish.

6. Bake at 325 degrees for 30 minutes until center bubbles and cheese is melted.
