Gingerbread Man Recipe

A classic Christmas treat that is fun to make with your children.

Cut-out cookies are the best for Christmas. I know I said no cookie recipies for a while, but you cannot have Christmas without gingerbread men. Decorating them and sharing them with others is the perfect way to spend a December afternoon during winter break. My kids like this modified recipe better than the more traditional dark molasses kind. Combine two fun activities by reading the story of the Gingerbread Man before or after baking. You can also use different cookie cutters to make gingerbread stars, gingerbread circles and so on.

What you need:

1/2 cup shortening
1 egg
1/2 cup packed brown sugar
1 1/2 cup flour
1 pkg. instant butterscotch pudding mix
1 1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
Cookie cutters, any shape you want
Frosting, in 2 or 3 different colors, either in bowls or in frosting decorator bags
Assorted edible decorations, such as sprinkles, raisins, etc.

What you do:

1. Mix egg, shortening and brown sugar together. Then mix in the rest of the ingredients in until well blended.

2. Roll out dough with a well-floured rolling pin. Cut out gingerbread men shapes with cookie cutter.

3. Place men on an ungreased baking sheet and bake for 10 minutes at 350 degrees.

4. Let cool completely on a wire rack.

5. Decorate men with frosting and candies.
