It's always a great idea to encourage children to help out in the kitchen. Besides the basic chores of setting the table and unloading the dishwasher, allow them to help out with dinner preparation.
These fruity side dishes are fun for kids to make, and can be done right before dinner when they are dying to help. Serving these with dinner also ensures that everyone gets a serving of fruit!
Fruit Kabobs
1 cup green grapes
1 cup red grapes
1 cup pineapple chunks
2 apples, cut into thin slices (adults should prepare this)
1 banana, sliced (adults should prepare this depending on child's age)
1 cup mandarin oranges
1 cup small marshmallows
8 wooden skewers
1 tbsp. sugar
1 tsp. lemon juice
Dipping sauce: any flavor yogurt (we like blueberry and strawberry vanilla best)
Thread alternating fruits onto the wooden skewers, so that there are about 8 pieces on each one. Lay on a large cookie tray and drizzle lemon juice over the kabobs. Sprinkle sugar over the kabobs. Serve immediately with dipping sauce for a delicious snack or healthy side dish. Serves 4 (2 kabobs each).
As always, have kids wash their hands before preparing any food. Of course, you can add and mix and match your favorite fruits as they are in season.
