Chicken Tortilla Stacks

Here is a fun recipe that utilizes what you've got in your pantry and fridge, plus it's so easy that the kids can make them with minimal supervision. There are many variations of this that you can use with leftovers, but these are our favorite. Great for an after school snack or even a complete lunch, Chicken Tortilla Stacks are a hit with all age groups. Experiment to see what fillings work for your family.

What you need:

4 small flour tortillas 1/2 cup soft cream cheese (we like it flavored with sun dried tomatoes or chives and onions) 1 cup cooked chicken, cubed 3 leaves of iceberg lettuce 3 to 4 black olives, sliced 3 to 4 cherry tomatoes, sliced

What you do: 1. Spread three tortillas with a thin layer of cream cheese. Make sure you spread the cream cheese to the edge.

2. Top the first tortilla with an equal amount of chicken, olives and tomato. Top with a lettuce leaf.

3. Stack the second tortilla on top of the first, pressing slightly.

4. Top tortilla with equal amounts of chicken, olives and tomato and top with a lettuce leaf.

5. Top with remaining tortilla.

6. Cut the tortilla stack into 3 pie-like wedges and serve.
