This is a recipe that my sister makes all the time whenever she babysits my kids. They love everything about these fun mini pizzas, from making them to eating them. Here are a few tips from her. First, have all the chicken cooked and chopped, and then the kids can just focus on "decorating" the pizza. She also says to include some less than traditional toppings to get little ones to eat some veggies. When we've made these at our house for dinner, we've sprinkled some corn, mushrooms, and even fresh tomatoes on these barbecue chicken pizzas for delicious results. The kids hardly know they're eating something healthy.
Barbecue Chicken Pizza
What you need:
2 cups chopped or cooked chicken
1 1/2 cups barbecue sauce
1 small red bell pepper, chopped
3 cups shredded Monterey Jack cheese
8 pita pocket bread circles
What you do:
Preheat oven to 400°. Place pitas onto 2 cookie sheets (4 per sheet). In medium bowl, combine the chicken and the barbecue sauce. Spoon about 1/3 cup onto the pita. Sprinkle with cheese and chopped pepper. Add any other toppings you'd like. Spread evenly over the bread. Bake in an oven for 12 minutes or until cheese is completely melted. Slice into quarters and serve warm.

Make a plate full of cupcakes and leave them on a neighbor's doorstep with a card that reads, "You've been visited by the Halloween Pixie. Happy Halloween!"
