When my daughter comes home from school, she's starving. My son usually agrees, as that's halfway between lunch and dinner. Rather than have them stand in front of the fridge shouting out that there's nothing to eat, I've given them one of the little side drawers as their own snack drawer. Usually it's full of string cheese, granola bars, and so forth, but when we feel like it, that snack drawer holds a container of chip dip. They can get the dip out and some chips and snack away. They don't care that the dip is healthy, and they love to help make it because it is easy and fast.
Here are two of our favorite after school snack recipes:
Taco Cottage Cheese Dip
What you need:
- 1 small carton of cottage cheese, small curd
- 1 tsp. taco seasoning
- 1 can black olives, chopped fine
- 1/2 cup shredded cheese (your favorite kind)
What you do:
- Dump cottage cheese into a mixing bowl.
- Add taco seasoning and mix.
- Chop olives and stir into mixture.
- Add cheese and mix thoroughly.
- Cover bowl and chill for about an hour. Served with chips or crackers.
White Bean Dip
What you need:
- 1 can white beans, drained
- 1 tsp. olive oil
- 1 to 2 tsp. dry Ranch dressing seasoning
- 1 tsp. sour cream
What you do:
- Pour beans into food processor or blender.
- Add oil, 1 tsp. of the seasoning and sour cream.
- Blend on medium for 2 to 3 minutes until smooth and creamy.
- Taste the dip and add more seasoning if needed. Serve with chips or crackers.
